Chicken Tortilla Soup recipe:

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 4 cups chicken broth
  • 1 (14.5 oz) can diced tomatoes
  • 1 (4 oz) can diced green chilies
  • 1 cup frozen corn
  • 2 cups cooked and shredded chicken
  • Salt and pepper, to taste
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup crushed tortilla chips
  • 1/2 cup shredded cheddar cheese
  • Lime wedges, for garnish

Instructions for Chicken Tortilla Soup recipe:

  1. Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
  2. Add the garlic, cumin, and chili powder and cook for 1 minute more.
  3. Stir in the chicken broth, diced tomatoes, green chilies, corn, and shredded chicken. Bring to a simmer and cook for 15 minutes.
  4. Season with salt and pepper, to taste.
  5. Ladle the soup into bowls and top with cilantro, crushed tortilla chips, shredded cheese, and a squeeze of lime juice.
