<p>Caldo de Pollo (Chicken Soup) Recipe</p>



<p>Cooking Time: 45 minutes Total Time: 1 hour Serves: 4</p>



<h3 class="wp-block-heading">Ingredients:</h3>



<ul>
<li>1 lb boneless, skinless chicken breasts, cut into small chunks</li>



<li>1 onion, diced</li>



<li>2 cloves of garlic, minced</li>



<li>1 cup diced carrots</li>



<li>1 cup diced celery</li>



<li>2 cups diced potatoes</li>



<li>8 cups chicken broth</li>



<li>2 cups water</li>



<li>1 tsp cumin</li>



<li>1 tsp dried oregano</li>



<li>Salt and pepper, to taste</li>



<li>Cilantro, for garnish (optional)</li>
</ul>



<h2 class="wp-block-heading">Instructions for Caldo de Pollo recipe:</h2>



<ol>
<li>In a large pot, heat some oil over medium-high heat. Add the chicken and cook until browned on all sides, about 5 minutes.</li>



<li>Add the onion, garlic, carrots, and celery to the pot. Cook for 5 minutes, or until the vegetables are softened.</li>



<li>Add the potatoes, chicken broth, water, cumin, oregano, salt, and pepper to the pot. Bring to a boil, then reduce the heat to low and simmer for 30 minutes.</li>
