Caldo de Pollo (Chicken Soup) Recipe

Cooking Time: 45 minutes Total Time: 1 hour Serves: 4


  • 1 lb boneless, skinless chicken breasts, cut into small chunks
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 cup diced carrots
  • 1 cup diced celery
  • 2 cups diced potatoes
  • 8 cups chicken broth
  • 2 cups water
  • 1 tsp cumin
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • Cilantro, for garnish (optional)

Instructions for Caldo de Pollo recipe:

  1. In a large pot, heat some oil over medium-high heat. Add the chicken and cook until browned on all sides, about 5 minutes.
  2. Add the onion, garlic, carrots, and celery to the pot. Cook for 5 minutes, or until the vegetables are softened.
  3. Add the potatoes, chicken broth, water, cumin, oregano, salt, and pepper to the pot. Bring to a boil, then reduce the heat to low and simmer for 30 minutes.
  4. Taste and adjust the seasoning if needed.
  5. Serve the soup hot, garnished with cilantro if desired.

Dressing the soup:

  • To dress up the soup, you can add some diced avocado, lime wedges, and/or chopped fresh cilantro on top of each bowl.
