  1. In a large pot, add the chicken thighs and cover with the chicken broth. Bring to a boil and then reduce to a simmer. Cook for 20 minutes or until the chicken is cooked through.
  2. Remove the chicken from the pot and shred it. Set aside.
  3. In the same pot, add the onions, garlic, and ginger. Cook until softened.
  4. Add the rice and stir until well combined.
