Caldo de Pollo (Chicken Soup) Recipe
Cooking Time: 45 minutes Total Time: 1 hour Serves: 4
Ingredients:
- 1 lb boneless, skinless chicken breasts, cut into small chunks
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 cup diced carrots
- 1 cup diced celery
- 2 cups diced potatoes
- 8 cups chicken broth
- 2 cups water
- 1 tsp cumin
- 1 tsp dried oregano
- Salt and pepper, to taste
- Cilantro, for garnish (optional)
Instructions for Caldo de Pollo recipe:
- In a large pot, heat some oil over medium-high heat. Add the chicken and cook until browned on all sides, about 5 minutes.
- Add the onion, garlic, carrots, and celery to the pot. Cook for 5 minutes, or until the vegetables are softened.
- Add the potatoes, chicken broth, water, cumin, oregano, salt, and pepper to the pot. Bring to a boil, then reduce the heat to low and simmer for 30 minutes.
- Taste and adjust the seasoning if needed.
- Serve the soup hot, garnished with cilantro if desired.
Dressing the soup:
- To dress up the soup, you can add some diced avocado, lime wedges, and/or chopped fresh cilantro on top of each bowl.
