Mamaw’s Chicken and Rice Casserole

- 3 cups cooked and shredded chicken
- 2 cups cooked white rice
- 1 (10.75 oz) can cream of chicken soup
- 1 (10.75 oz) can cream of mushroom soup
- 1 (8 oz) package cream cheese, softened
- 1 cup chicken broth
- 1/2 cup butter, melted
- 1 cup shredded cheddar cheese
- 1 cup crushed cornflakes
Instructions for Mamaw’s Chicken and Rice Casserole recipe :
- Preheat your oven to 350°F (180°C).
- In a large mixing bowl, combine the cooked and shredded chicken, cooked rice, soups, and cream cheese. Stir until well combined.
- Spread the mixture into a 9×13-inch baking dish.
- In a separate small mixing bowl, combine the chicken broth and melted butter. Pour the mixture over the top of the casserole.
- Sprinkle the cheddar cheese and crushed cornflakes over the top of the casserole.
- Cover the dish with aluminum foil and bake for 45 minutes.
- Remove the foil and continue baking for an additional 15 minutes, or until the top is golden brown and the casserole is heated through.
To dress it up and make it beautiful, you could try garnishing the casserole with fresh herbs like parsley or chives, or adding a sprinkle of paprika or cayenne pepper for a little bit of extra flavor and color.
